Recipe - Pumpkin and Thyme Soup, Just Delish!
This would have to be my best yet. That is all I can say. just don't share any of it!
- Half a butternut pumpkin
- 2 brown onions
- 2 tablespoons of olive oil
- I clove of garlic
- 2 sprigs of thyme (chopped)
- 1 cup of water
- 1 chicken stock cube or vegetable cube
- Salt and pepper to taste
Cut up the onions and fry in a saucepan with 2 tablespoons of olive oil and the garlic until brown
Chop up the pumpkin and add to the pot. Add in 1 cup of water with the stock
Chop up the sprig of thyme and add to the pot
Add the salt and pepper
Bring to the boil and simmer for 20mins on low.
Remove after 20 minutes and then cool for 2 hours
Blend after 2 hours and serve with a it of parsley
Enjoy!
The last month in Autumn...
We are now up to the middle of the last month of Autumn, but all is not lost. There is still time for a last minute garden party before the winter settles in. The sun is still shining and in Sydney at least it warms up nicely in the middle of the day. So don't hesitate, get some friends around and make the most of the outdoors!

If you haven't heard of Kitiya Palaskas, then you may be living a very uncolourful life. I once came accross Kitiya when she held a DIY Zine making class in Sydney. I was baffled that you could make something so creative and eclectic just from some coloured paper, glitter and a trusty photocopier. Since then, I have joined Kitiya and followed her Instagram and Twitter journey through vibrant mediums. What does she do you may ask?
