Caramelised Red Onion and Fetta Tarts

This recipe if my favourite. It's a quick and simple one to whip up when you have friends coming over. I usually make it as a starter for my veggie pals, and they LOVE it!

Ingredients:

  • 3 sheets of Puff pastry
  • 4 red onions
  • 2 tbs brown sugar
  • 2 tbs balsamic vinegar
  • 1tbs olive oil
  • 1 egg whisked
  • 1 sprig of parsley
  • 150g fetta cheese

Method

Pre-heat oven to 160 degrees and defrost the puff pastry and slice up the red onions. In a saucepan heat up oil and brown onions for 2 minutes, then add in brown sugar and balsamic vinegar, simmer on low until softened and thickened. Cut the sheets of pastry into square quarters and once the caramelized onion is cooked place a tablespoon in the centre of the square. Add a teaspoon of fetta cheese on top of the onion and sprinkle some parsley over the ingredients. After you have made all twelve, fold the corners of each into the middle of the puff and brush with the whisked egg. Put into the oven on 160 degrees and cook for 15 minutes until brown. Take out an cool.

Serve up on a nice wooden bread board or colourful plate and enjoy!
